Slow-Cooked Dum Biryani in the Authentic Style

Chicken Biryani is a traditional rice-based dish that defines celebratory Indian cooking. At Spices, our biryani is prepared in the classic dum style: marinated chicken and basmati rice are layered with caramelised onions, fragrant whole spices, and a touch of saffron, then sealed and cooked until every grain absorbs the masala. The result is a fluffy, deeply flavoured biryani with tender chicken in every spoonful.

Aged Basmati, Saffron, House-Blended Masala

We start with premium aged basmati rice and free-running chicken, layered with cardamom, cloves, cinnamon, bay leaf, saffron, mint, and a slow-cooked masala. Prepared medium spicy by default, with milder or hotter options on request. Naturally gluten-free.

Perfect Pairings

Each biryani is served with a side of plain curry sauce or cooling raita. Add garlic naan and a side of Chana Masala for a complete feast. A favourite for family dinners and birthday celebrations at both Seton and Okotoks.
